The cuisine is known for favouring the simple over the sophisticated and ingredients such as the humble potato remain an essential part of the cooking. This root has been the basis of both nourishment and grief, following the Great Famine of 1845. While memories of the famine still survive, the Irish have developed a new attitude towards their food, demanding quality over mere sustenance. You could also try pouring the sauce over a mound of mashed potato, sprinkling over a little extra grated Gabriel and finishing under a hot grill until golden and bubbling.
