Editor en Jefe Gail Cresci, MS, RD, CNSD, LD Director Surgical Nutrition Medical College of Georgia Augusta, Georgia USA The science of nutrition, with its evolution over the past several decades, has become a very exciting field to both nutritionists and the lay public. It has grown from the treatment of single nutrient deficiencies and the treatment of disease with therapeutic diets, to covering all aspects of growth and development as well as maintaining health and well being. Current research now reveals that good nutrition can prevent many disease states. Also with the accumulating problems with antibiotic-resistant microorganisms, there is a bigger interest in modulating the immune system through nutrients to fight off infections. Medical food is defined slightly different from functional food. In contrast with functional foods, supplements are an accepted form of medical food. Supplements of concentrated ingredients such as antioxidants, vitamins, minerals, amino acids, nucelotides, special fatty acids such as n-3 fatty acids, fibers, and bacteria are important for function of medical foods.

Good sources of essential minerals include fruits, vegetables, meats, nuts, beans and dairy products. Unfortunately, much of the soil in which food is grown has been depleted of these nutritive minerals, therefore the mineral content in food is reduced.3,4 We also obtain some minerals from the water we drink, but the amounts vary widely.

Extractions: Other Ingredients ... Table Of Contents The Skinny On Fats Diabetic Diets Fat-Soluble Vitamins: These include true vitamin A or retinol, vitamin D, vitamin K and vitamin E as well as all their naturally occurring cofactors needed to obtain maximum effect. Butter is Americas best source of these important nutrients. In fact, vitamin A is more easily absorbed and utilized from butter than from other sources. Fortunately, these fat-soluble vitamins are relatively stable and survive the pasteurization process. The Wulzen Factor: Called the "antistiffness" factor, this compound is present in raw animal fat. Researcher Rosalind Wulzen discovered that this substance protects humans and animals from calcification of the jointsdegenerative arthritis. It also protects against hardening of the arteries, cataracts and calcification of the pineal gland. Calves fed pasteurized milk or skim milk develop joint stiffness and do not thrive. Their symptoms are reversed when raw butterfat is added to the diet. Pasteurization destroys the Wulzen factorit is present only in raw butter, cream and whole milk. The Price Factor or Activator X: Discovered by Dr. Price, Activator X is a powerful catalyst which, like vitamins A and D, helps the body absorb and utilize minerals. It is found in organ meats from grazing animals and some sea food. Butter can be an especially rich source of Activator X when it comes from cows eating rapidly growing grass in the spring and fall seasons. It disappears in cows fed cottonseed meal or high protein soy-based feeds.64 Fortunately, Activator X is not destroyed by pasteurization.
