    Extractions: In 600 A.D. the Mayans migrated into the northern regions of South America, establishing the earliest known cocoa plantations in the Yucatan. It has been argued that the Mayans had been familiar with cocoa several centuries prior to this date. They considered it a valuable commodity, used both as a means of payment and as units of calculation. Mayans and Aztecs took beans from the "cacao" tree and made a drink they called "xocoatl." Aztec Indian legend held that cacao seeds had been brought from Paradise and that wisdom and power came from eating the fruit of the cacao tree. The word "chocolate" is said to derive from the Mayan "xocoatl"; cocoa from the Aztec "cacahuatl." The Mexican Indian word "chocolate" comes from a combination of the terms choco ("foam") and atl ("water"); early chocolate was only consumed in beverage form. Christopher Columbus is said to have brought back cacao beans to King Ferdinand from his fourth visit to the New World, but they were overlooked in favor of the many other treasures he had found. Chocolate was first noted in 1519 when Spanish explorer Hernando Cortez visited the court of Emperor Montezuma of Mexico and took back three treasure chests of beans back to Spain.. American historian William Hickling's History of the Conquest of Mexico (1838) reports that Montezuma" took no other beverage than the chocolatl, a potation of chocolate, flavoured with vanilla and spices, and so prepared as to be reduced to a froth of the consistency of honey, which gradually dissolved in the mouth and was taken cold." The fact that Montezuma consumed his "chocolatl" in goblets before entering his harem led to the belief that it was an aphrodisiac.

Add flour and mix before placing into 56 by 36cm frame and bake for 60 minutes at 180C. Bake another five minutes at 200C. 2. Feuilletine: Combine 350g of Praline paste, 350g of milk chocolate and 250g of crunchy almonds and mix. 3. Equatorial Mousse: Place 250g of milk with 100g of brown sugar and bring to a boil. Add 9g of gelatin. Put 400g of milk chocolate into a mixer and finely grind. Add this to 10g of brown rum and combine into mixture. Add 375g of whipped cream when batch reaches 30C. 4. Ivory Mousse: Place 500g of milk with 20g of vanilla sugar and one vanilla bean. Bring to a boil before adding 18g of gelatin. Put 800g of white chocolate into a mixer and finely grind. Add this to the mixture and allow it to reach 30C before adding 750g of whipped cream. 5. Finale: Place Sacher sponge into a frame and spread the Feuilletine on top. Let dry before pouring the mousse. Cool in deep freezer. Sprinkle with chocolate for decoration. - KIM HEE-SUN

    Extractions: 3 squares (1 oz. each) unsweetened chocolate, melted Sift together salt, baking soda, and flour. Set aside. Place beets in blender jar and puree. Add sugar, oil, and beet juice to beets and blend. Add eggs and vanilla. Blend well. Pour the beet mixture into a mixing bowl and add the dry ingredients. Mix well on medium speed for approximately one minute. Stir in melted chocolate. Pour batter into two greased and floured 8- or 9-inch round cake pans. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted comes out clean. Let cool. Frost with your favorite chocolate frosting and decorate top with chocolate curls if desired. To make chocolate curls: Melt semi-sweet chocolate chips or semi-sweet baking squares in the microwave. Invert a baking sheet and spread the chocolate in a thin layer over the sheet. Let set in refrigerator until chocolate is set but not hard. Take a spatula and scrape the chocolate from the pan to create a curl. The curls will be as wide as the spatula used. If the chocolate breaks let it soften at room temperature. If it is too soft, return to the refrigerator for a few more minutes. When you have the right consistency you will be able to create beautiful chocolate curls. Place a pile of curls on the cake and lightly dust with powdered sugar.
