    College of Human Development and Education

    The family and consumer sciences education (FCSE) program at North Dakota State University has been approved by the State Board for Vocational Education for the preparation of family and consumer sciences teachers. The FCSE program is a versatile major due to the preparation of the student as both an educator and a family and consumer scientist.
    The Program
    As an educator, the FCSE graduate is prepared to guide a variety of teaching-learning situations. Since education is a people-centered profession, the program focuses on characteristics of various learners or clients, learning principles and different applications of the teaching-learning process. A wide range of strategies for working with individuals or groups is included. Hands-on experience is provided throughout the program to develop the teaching skills learned in classes.
    As a family and consumer sciences educator, the FCSE student is prepared with a comprehensive subject matter background. Courses from all areas of family and consumer sciences are included in the program. This contributes to the versatility of the major since the broad range of knowledge may be applied to a wide variety of settings.

    The school also operates the Center for Family Studies and, in conjunction with the College of Education's Department of Elementary Education, the University Center for Child Development. The Center for Family Studies, established in 1979, was designed to stimulate and encourage the interdisciplinary study of the family. It serves both the University and the community by fostering collaboration between faculty, students, practitioners, and community leaders on curriculum development, educational conferences and seminars, research and training, and public policy relevant to important family issues. The University Center for Child Development serves as a teaching laboratory for child development and early education students and is accredited by the National Academy of Early Childhood Programs. The School of Family and Consumer Sciences is accredited by the American Association of Family and Consumer Sciences. The dietetics program is accredited by the American Dietetics Association, and the interior design program is accredited by the Foundation for Interior Design Education Research (FIDER).
    The School of Family and Consumer Sciences at The University of Akron takes an ecological approach to the study of the individual and family. It takes the same approach to study the relationships between families and the changing social, health, economic, and physical environments.

    • Family and Consumer Sciences- This major prepares students for broad-based employment in the field of family and consumer sciences and for effective individual and family living. A minor in a supporting area is required. Suggested minors may include business, communications, art, journalism or foreign language. Family and Consumer Sciences Education with Teacher Certification (for high school). This major prepares students to teach at the high school level. There are several types of high school family and consumer sciences programs. The program for teaching is designed to meet the certification requirements for the State of Texas. To become fully certified students must complete the degree program and pass the state exam.
    There are three teaching certifications in Family and Consumer Sciences (FCS):
    • FCS Composite (Certificate to teach all FCS high school courses) FCS with Hospitality and Food Science (Certified to teach food, nutrition, and hospitality courses)

    Because issues that affect Tennessee families are complex, our programs cover more than one subject area. Our 2004 Initiatives are designed to educate families about money, nutrition, health and the environment. Tennessee children and youth are taught to be smart consumers about money, health, safety, nutrition and technology in our LifeSmarts and LifeSkills programs.

    Graduate Programs
    Admission is open to all students with a bachelor of science degree who meet the general requirements set by the graduate school. The M.S. in Family and Consumer Sciences degree allows a student to focus on one of the four areas or to take course work across any combination of the four areas of specialization. The student, major professor, and graduate committee determine the program of study and research project which meets the needs of the individual student. Students may be required to take more than the minimum of 30 hours, either because they have to satisfy prerequisites for some courses, or because a students committee determines that more than 30 hours will be needed for the student to reach her or his professional objectives. An interdisciplinary program in food science/human nutrition leading to a Master of Science degree is available within the College of Agriculture. Cooperating curricula include food science (Department of Animal Science) and human nutrition and food (Department of Family and Consumer Sciences). The program allows a student to pursue graduate studies in areas such as food microbiology, human nutrition and metabolism, meat science, food product development and food chemistry. Entering students should have strong backgrounds in the biological sciences.

    THE FAMILY AND CONSUMER SCIENCES Department offers a Bachelor of Science (B.S.) Degree with concentrations in three areas: Family and Consumer Sciences Education, Food and Nutrition and Infant and Child Development THE FAMILY AND CONSUMER SCIENCES EDUCATION program is a comprehensive program that emphasizes understanding human development and family resource management. Graduates are well-rounded in general education, as well as Family and Consumer Sciences content. While the curriculum is planned to meet certification requirements for family and consumer science teachers, graduates are versatile and flexible enough to pursue traditional and non-traditional careers in education, business, social welfare and public health, international service and as extension agents. FOOD SELECTION AND PREPARATION are only a small part of the Food and Nutrition program where students study the principles of nutrition and the physiology of feeding individuals with special dietary needs. Graduates in Food and Nutrition are prepared for careers in industry, health care services, recreation, business and education. Graduates also meet requirements for entering a Plan IV American Dietetics Association approved internship program. INFANT AND CHILD DEVELOPMENT is not about learning how to babysit in a daycare center. Instead, students discover and learn to apply psychological and developmental principles to the physical, intellectual, social and emotional needs of young children. Graduates may find employment and careers in clinics and hospitals, in child care facilities such as nursery schools, kindergartens and daycare administration, and in child research programs.
