We set our daily schedules by it, depend on it for good health, and it is the focal point of most of our social activities. Hundreds of billions of dollars are spent each year on advertising, processing and purchasing food. As a result, food processing is one of the nation’s largest industries. With growing and shifting populations, methods for processing, distributing and marketing foods have changed dramatically in this century. Along with these changes, there are increasing new challenges in food safety and quality. This is an exciting time as new and innovative processing methods are emerging with technologic advances.
Seafood HACCP and Sanitation Training Courses Offered

The LSU AgCenter and Louisiana Sea Grant Seafood Technology program are offering seafood AFDO Hazard Analysis Critical Control Point (HACCP) training and Sanitatin Control Proscdures (SCP)in Baton Rouge on the LSU campus in September.

The Food Science Institute (FSI) was established in 2001 to integrate the expertise in food science across K-State. FSI facilitates the undergraduate graduate , and distance education programs and provides both research and technical assistance for the food industries. Approximately, 40 nationally and internationally recognized faculty from five colleges and 11 departments serve as teachers, mentors, researchers, and extension specialists in the following areas: food chemistry, food microbiology, food safety, veterinary medicine, cereal science, dairy science, meat science, food service, sensory analysis, food engineering, human nutrition, and product development. Food Science
Food science deals with the transformation of raw agricultural goods into food products acceptable for human consumption. This field of applied science involves studying diverse scientific disciplines such as chemistry, engineering, microbiology, biochemistry, toxicology and management as they relate to food, and effectively applying the industrial and practical aspects to product development, food processing, preservation and marketing.
The Faculty and Facilities
Food science is a four-year curriculum offered by the College of Agriculture, Food Systems, and Natural Resources through the Department of Cereal and Food Sciences. The program draws on the expertise of faculty in several departments at North Dakota State University. These faculty have expertise in both teaching and research. Many have industry experience with numerous connections in the food industry.
The Industrial Agriculture and Communications Center (IACC) and Harris Hall at NDSU house laboratories and teaching facilities where many of the food science courses are taught. Extensive facilities are available for teaching and food processing research.

    Located within the College of Agricultural Sciences, the Department of Food Science and Technology (FST) offers undergraduate and graduate programs of study supported by 17 tenured and tenure-track faculty, a number of adjunct faculty, and 35 graduate students. Most faculty are housed in Wiegand Hall. Off campus facilities include the Food Innovation Center in Portland, Oregon and the Seafood Laboratory in Astoria, Oregon.
