Why dairy?
Milk and Dairy Products contribute to a great extent to the availability of health promoting and physiologically active nutrients. Nowadays, additional challenges in the prevention of diseases reach new dimensions. For these emerging tasks the Dairy Science and Technology course offers methods and perspectives to prepare for the future.
Structure and content of the course
This masters course in Dairy Science and Technology is taught in an interdisciplinary manner. The course includes the biogenesis of milk, the hygienic, microbiological, and physicochemical aspects of the raw materials and of the product systems. It further stretches from the conversion technologies and economical basis of the manufacturing process to the physiological effects of the ingredients and products.
Within Food Science this interdisciplinary collaboration is especially well developed in dairy science and technology. Modern biotechnolpgical processes, novel physical and biomolecular methods are the basis for consumer preferred products especially designed for a healthy life and for the prevention and even therapy of diseases. Scientific insights and new technical solutions resulting from this approach provide innovative platforms to master current and future challenges in nutrition. Infants, pupils and adults in professions with high physical and mental output necessities need food products, which address these group specific nutritional requirements.

Education in India : Dairy Technology And Science
Looking for a Career Option in the Field of Dairy Technology And Science ? This section features Dairy Technology And Science as a career option, elaborated with reference to the job profile, personality traits required, the courses and training involved, premier institutions and future prospects. Dairying plays a dynamic role in India's agro-based economy. A decade ago only 5% of the milk produced came into the dairies. Today it is 15%, and this figure will keep increasing. Today India ranks second only to the US in terms of milk production. Dairy Technology deals with all methods of handling milk from production and consumption and includes processing, packaging, storage, transport and physical distribution. Based on the sciences of biochemistry, bacteriology, and nutrition, Dairy Technology employs the principles of engineering. Its objectives are to prevent spoilage, improve quality, increase shelf-life, and make milk palatable and safe for human consumption. Dairy Farming has grown from this largely unorganized - if complex - activity, into a vast organized industry, that encompasses not only increased production of milk and milk products , but also the breeding of higher yielding cattle, and the scientific rearing of cattle and production of cattle feeds. This has proportionately increased the demand for trained manpower in this sector.
