The Cal Poly Dairy Science Department is one of the best in the nation. Housing its own dairy herd and also home to its own creamery, Cal Poly is making waves and setting new standards of education throughout the country. Staying true to Cal Poly's motto of "Learn by Doing," the Dairy Science Department gives students the chance to gain hands-on experience in many areas of production, processing, and products technology, including research and development at the graduate level, while teaching the history, science, theories and recent developments in the classroom. With a solid group of young people and one of the most knowledgeable faculty teams around, the Dairy Science Department is a wonderful place for anyone to obtain a bachelor of science or master's degree. News Congratulations to the Virginia Tech Dairy Cattle Judging Team on an impressive win at Louisville. The team placed first overall (out of 24 teams), first in oral reasons and first in both Holsteins and Guernseys! Team members are Ryan Haines, Taneytown, MD, Danny Hardesty , Berryville, VA, Katie Pike , Cornish, ME, and Malorie Rhoderick , Mt. Airy, MD. Malorie was High Individual in oral reasons, first in Holsteins and Guernseys and 7th in the contest. Katie placed 9th in oral reasons and 9th overall, and Ryan placed 10th in oral reasons and 10th overall. The team was coached by Drs. Katharine Knowlton and Mike Barnes. Congratulations to the Virginia 4-H Dairy Quiz Bowl Team on winning the 2007 North American 4-H Dairy Quiz Bowl Contest on November 2-3. The contest was held at the North American International Livestock Exposition in Louisville, Kentucky. Good evening, and welcome to the Dairy Science and Food Technology website. It is 10:05 PM on Thursday 24th January, 2008.
This site contains information on the industrial utilisation of lactococci and other lactic acid bacteria, their bacteriophages (phages), natural and 'added' antimicrobial systems in milk, and factors influencing the quality and yield of cheese. There are also sections on probiotics, bioactive peptides,ice cream, modeling in food technology,thermal processing and modified atmosphere packaging and labeling . Some general health information including reference to allergy and food intolerance, related mainly to dairy products, is also presented. This material may be of interest to dairy science/ food technology undergraduates and postgraduates, and others interested in dairy science and technology. The discussions on starter cultures include the role of starters in fermentations, their ecology, classification, the rationale for assigning lactic streptococci to the genus

Meeting the needs of the growing dairy industry on the Southern High Plains requires an innovative and aggressive curriculum and program to provide students an educational opportunity to meet the industries needs. The combined New Mexico and Texas milk shed is the third largest milk production area in the US. Currently, Texas is the eighth largest dairy state. However, with the continued rapid expansion of the industry in the Texas panhandle, Texas is expected to become the sixth or fifth ranked states in the near future.
The dairy undergraduate and graduate program
Texas Cooperative dairy specialists are located in regional offices across the state to meet the needs of Texas dairy producers. The Extension group provides adult educational programs such as the New Mexico/Texas Dairy Highlights, Southern Great Plains Dairy Conference, and local and regional workshops and clinics through out the year.

Dairy Science
Dairy Science is the animal care, business, and services associated with a dairy farm or dairy agribusiness.
With the Associate of Science degree, dairy science majors complete a combination of technical and general courses that allow them to gain hands-on experience while completing 50 percent of the curriculum for a Bachelor of Science in Agriculture degree at The Ohio State University College of Food, Agricultural, and Environmental Sciences.
This degree also includes the transfer module, a common set of general education courses which apply to other bachelor's degree programs in Ohio.
Students who are not planning to ultimately pursue a bachelor's degree might be interested instead in our Dairy Cattle Production and Management Associate of Applied Science curriculum.
