Grignard objevil v roce 1900 reaktivní alkyl-(aryl-)magnesium halogenidy (pozdìji po nìm nazvané Grignardovy slouèeniny). Vypracoval øadu metod organické syntézy, zabýval se i terpeny, organickými slouèeninami hliníku a katalytickou hydrogenací. Sabatier se zabýval katalytickou hydrogenací organických slouèenin - hlavnì s použitím niklu. Jedna z jeho metod se uplatnila pøi výrobì ztužených pokrmových tukù.
