Eduard Buchner was born in Munich on May 20, 1860, the son of Dr. Ernst Buchner, Professor Extraordinary of Forensic Medicine and physician at the University, and Friederike Martin.
He was originally destined for a commercial career but, after the early death of his father in 1872, his older brother Hans, ten years his senior, made it possible for him to take a more general education. He matriculated at the Grammar School in his birth-place and after a short period of study at the Munich Polytechnic in the chemical laboratory of E. Erlenmeyer senior, he started work in a preserve and canning factory, with which he later moved to Mombach on Mainz.
The problems of chemistry had greatly attracted him at the Polytechnic and in 1884 he turned afresh to new studies in pure science, mainly in chemistry with Adolf von Baeyer and in botany with Professor C. von Naegeli at the Botanic Institute, Munich.
It was at the latter, where he studied under the special supervision of his brother Hans (who later became well-known as a bacteriologist), that his first publication, (The influence of oxygen on fermentations) saw the light in 1885. In the course of his research in organic chemistry he received special assistance and stimulation from T. Curtius and H. von Pechmann, who were assistants in the laboratory in those days.

Pozdìji se stal profesorem na univerzitì v Tubingenu, v roce 1898 se stal profesorem na zemìdìlské vysoké škole v Berlínì. Buchnerova vìdecká èinnost se již od poèátku soustøedila na oblast organické chemie, speciálnì pak na problémy kvasné chemie (již ve svém prvním vìdeckém díle se zabýval vlivem kyselin na kvašení) V roce 1897 uveøejnil Buchner výsledky svého dlouholetého výzkumu alkoholického kvašení bez kvasinkových bunìk, pøièemž zjistil, že pøíèinou kvašení je neživá chemická látka-enzym nazvaný zymáza. Tento první objevený enzym, který Buchner izoloval z kvasinek,vyvolává alkoholické kvašení cukrù i bez pøítomnosti živých bunìk. Tento objev se stal základem nového samostatného vìdního oboru-biochemie. Buchnerovy výzkumy enzymù pomohly objasnit nìkteré do té doby nevysvìtlitelné chemické reakce probíhající uvnitø bunky a obrátily pozornost vìdcù na výzkum chemických procesù v živém organismu. Jejich výsledky potvrdily dùležité argumenty pro hypotézu o platnosti fyzikálních a chemických zákonù v živých organismech.

Berichte des Deutschen chemischen Gesellschaft A Documentary History of Biochemistry, 1770-1940 (Rutherford, NJ: Fairleigh Dickinson University Press, 1992)] A separation of the fermentative action of living yeast cells has not so far been successful; in the following a procedure is described which solves this problem. 1,000 grams of brewers' yeast, purified for the preparation of pressed yeast but still not treated with potato starch, is carefully mixed and then rubbed with an equal weight of quartz sand and 250 grams of kieselguhr, until the mass becomes moist and plastic. The paste is then treated with 100 grams of water and, wrapped in a press cloth, is placed gradually under a pressure of 4 to 500 atmospheres: 300 cubic centimeters of press juice result. The residual mass is then again rubbed, sieved and treated with 100 grams of water. Treated once more in the hydraulic press with the same pressure, it gives another 150 cubic centimeters of press juice. Thus from 1 kilo of yeast 500 cubic centimeters of press juice are gained containing about 300 cubic centimeters of substances which are cell contents. To remove traces of cloudiness, the press juice is finally shaken with 4 grams of kieselguhr and filtered through a paper filter with repeated refiltrations for the first portions. carbonic acid , are observed rising and consequently saturating the liquid with this gas.
