Etymology
From the Taino "cassavi" Description
Cassava is a shrubby variety of spurge (Euphorbiaceae). Its tubers or tuberous roots are grouped at the bottom of the plant in a tangle of rootlets. The tuber is long, irregularly shaped and about 5 cm in diameter. Its white flesh is covered by a brownish layer which resembles bark. There are two main varieties:
  • The bitter variety is poisonous when raw. It contains hydrocyanic acid, which is neutralized when pressure is applied and the toxic juice squeezed out. It is used mostly for tapioca and for certain cassava dishes. In the West Indies it is mainly made into starch.
  • The sweet variety is the most widely known in cooking. The tuber needs only to be peeled and cooked in boiling water like a potato.

  • 1 1/2 pounds yuca, peeled, halved and cut into chunks 5 cloves garlic, mashed into 1 teaspoon salt juice of a lemon 1/3 cup olive oil 2 small onions, chopped finely
Method
  • Put the yuca in a saucepan and add water until the yuca is just covered. Add the salt, and bring the pan to a boil. Reduce heat, cover and simmer the pan for approximately 30 minutes, until the yuca is tender. Drain the pan and remove any 'woody' parts from the center of the yuca. Mash the garlic cloves into the salt with mortar and pestle.

    Rafael Palomino's Yuca Fries Serves 8 lbs. peeled fresh or frozen yuca, cooked Canola oil for deep frying Kosher salt for sprinkling Cut yuca into 1/2-inch-thick slices. Preheat oven to 250 degrees F. and place oven-proof serving platter inside. In deep, heavy pot or deep fryer, heat 2 inches of oil to 365 degrees F. Fry small batch yuca for 3 to 5 minutes, or until lightly browned. Using a skimmer, transfer to paper towels to drain, then to large bowl. Sprinkle with salt and toss lightly with your hands.     METHOD
    Basic Steps
  • Prepare filling of your choice. Mix grated yuca, onion, egg, salt and pepper together in a bowl. Place about 1/4 cup of the yuca mix in one hand. Form a depression with your thumb. Place around 1 T of filling in the depression and fold the yuca over to cover it. Form the yuca into an egg-shaped ball and squeeze out excess moisture. Set aside and repeat with the rest of the yuca and filling. Heat 2-3 cups of oil in a skillet over medium-high heat. Add 3-4 muchines at a time and fry till golden brown and cooked through, about 3-5 minutes. Turn midway to brown both sides. Remove to a paper towel-lined plate and serve hot.
  • VARIATIONS
    • Cheese Filling : Use 1 cup of grated jack, mozzarella, Swiss or whatever cheese you like. Pork Filling 2 T oil 1/2 onion, minced 1 T parsley 1 T cilantro 1/2 lb ground pork 1/4 t ground cumin 1/4 t salt
    Sauté the onion, parsley and cilantro in the oil till onion is translucent.

    1 1/2 lb frozen yuca (not thawed; do not substitute fresh)
    2 cups heavy cream 2 garlic cloves, finely chopped 3/4 teaspoon salt 1/4 teaspoon black pepper Cook yuca in a 4- to 5-quart pot of boiling salted water until fork-tender, about 25 minutes (thinner pieces may need less time and can be removed early with a slotted spoon). While yuca cooks, bring cream, garlic, salt, and pepper just to a boil, uncovered, in a 2-quart saucepan over moderate heat, then remove from heat. Drain yuca. When cool enough to handle, remove and discard thin fibrous cores if necessary, then cut yuca crosswise into 1/4-inch-thick slices. Layer slices evenly in a 2- to 2 1/2-quart shallow ovenproof baking dish. Pour cream mixture over yuca. Bake gratin until cream is thickened and top is golden brown in spots, about 30 minutes. Cooks' note: Gratin can be baked 1 hour ahead and kept, loosely covered with foil, at room temperature.

    2 lb fresh yuca, cut crosswise into 2 1/2-inch sections, then peeled with a knife and cut lengthwise into 1/3-inch-thick fries, or 1 1/2 lb frozen yuca pieces (not thawed) About 6 cups vegetable oil 1/2 cup mayonnaise 2 tablespoons fresh lime juice 2 teaspoons minced canned chipotle chiles in adobo, or sauce from can Special equipment: a deep-fat thermometer Cook fresh or frozen yuca with 1 tablespoon oil in a 6- to 8-quart pot of boiling salted water , uncovered, until tender when pierced with a knife and almost translucent, 8 to 12 minutes for fresh or 10 to 15 for frozen.
