People in Hispanic countries use cassavas (also called manioc, mandioca, yucca, yuca, yucca root, yuca root, Brazilian arrowroot) much like those of us in the U.S. use potatoes. Some of the tubers are sweet even when eaten raw; others are bitter. In the case of the Agavaceae, most times the bitterness seems to be in the skin, so peeling the tuber before using or cooking should greatly reduce the bitterness (which is due to its prussic acid content). Fresh tubers can be hard to peel; nuking it for a minute or so may make it easier, just as it does with winter squash. The fresh tubers don't have a long shelf life, so use within a couple of days of purchase. The flowers , especially the young ones of must Yucca species are tender and sweet when eaten raw. You can even stuff them with a savory vegetable/bread crumb stuffing and steam or bake them.

La yuca ( Manihot esculenta Crantz) se cultiva en más de 90 países y les permite subsistir a quinientos mil millones de personas en el mundo en desarrollo. Esta raíz rústica no sólo representa un alimento básico para muchas familias agrícolas de escasos recursos, sino que es también la materia prima para elaborar concentrados comerciales para animales, fibra para los fabricantes de papel y de textiles, y almidón para la industria de alimentos y la farmacéutica. In fact, a taste for the ridiculous is even more useful in a restaurant where the Venezuelan chef goes to extremes to create Latin cameos with the food. There is El Mariachi, a grilled New York steak propped up against sweet potato and ginger purée, with a large Mexican hat made from chorizo sausage and jalapeño peppers. Or how about the 'surfing veal chop'? It comprises a chop astride green plantain 'smashed' into the shape of a surfboard. This somewhat theatrical food is called Nuevo Latino - new Latin cuisine, and it can perhaps best be summed up as the culinary equivalent of Carmen Miranda's turban. Chef Luis Contreras assembles flavours and colours from sources throughout the Caribbean and Central and South America to produce dishes that are delicious and eye- catching - his signature dish, seafood puteria , comes in an amber basket of fried plantain - and by the same token, fun.

General Information:
Yuca (YOO-kah) is a prime crop of tropical and subtropical countries. Also known as manioc or cassava, yuca has two main varieties, bitter and sweet. Bitter yuca is poisonous unless cooked. Sweet yuca is dense, softly fibrous, and starchy. It is sweetly chewy. Yuca roots have a brown, bark-like peel and are about 8 to 12 inches long. When yuca is dried and ground, it becomes tapioca. Fresh yuca is available year-round. Selection and Storage: Yuca should smell clean and fresh, with no hint of ammonia or sourness. The root should be completely covered with its bark-like skin. Avoid those with cracks, sliminess or mold. Once cut, discard any that have grayish-blue fibers or any darkness near the skin. Do not refrigerate, but keep cool. It will only last a few days. Preparation and Cooking Tips: To peel, cut tuber into 3-inch sections. Cut an incision down the side. Under the bark, there is an underskin. Place a paring knife under the underskin and peel. Remove the central fibrous cord after cooking.
