Al Roker
News anchor Albert Lincoln Roker (born August 20, 1954) is an American television broadcaster, best known as the weatherman for NBC's Today show. Born in Queens, New York, Roker attended Xavier High School in Manhattan. Later, he began his weathercasting career while he was a student at the State University of New York at Oswego. After working in Syracuse, New York,Cleveland, Ohio, and Washington, D.C., Roker became the weekend weatherman for NBC's Today show. In 1998, he replaced Willard Scott as the full-time weekday weatherman. Roker has hosted numerous events for NBC, including Christmas at Rockefeller Center and the Macy's Thanksgiving Day Parade, and produced several programs for PBS, MSNBC, and the Food Network. He is also the author of several non-fiction books, and an avid barbecue enthusiast. In 1987, Roker and his first wife adopted a baby girl.

5 tablespoons chili powder
1 tablespoon salt + 2 tsp.
2 sticks unsalted butter
2 medium onions, peeled, finely chopped
6 cloves garlic, peeled, minced
1 cup ketchup
1 cup extra virgin olive oil
5 tablespoons light brown sugar 1 cup Worcestershire sauce 1 lemon, sliced 3 tablespoons fresh squeezed lemon juice 3 bay leaves 2 teaspoons dried oregano 2 teaspoons dried thyme leaves 1 teaspoon cayenne pepper several dashes Louisiana hot sauce Cook's Note: You can buy large, frozen tiger shrimp that have been deveined but are still in the shell. If you use these, thaw them according to the package directions. If using fresh shrimp, you can ask the person at the fish counter to devein them for you in the shell. You can also do this yourself: Using kitchen shears, cut the shell along the vein and pull the vein out with your fingers. Or, you can just skip the deveining process. The vein won't hurt you. Combine 3 tablespoons of the chili powder and 1 tablespoon of the salt in a small bowl. Rub the shrimp with this mixture, making sure you rub some into the open cut where the shrimp as been deveined (if applicable) to season the shrimp inside the shell. Place the shrimp in a shallow, non-reactive pan, cover with plastic wrap and refrigerate while you make the sauce.

    Scripps Howard News Service Here is Al Roker's cookout recipe for jerk chicken. It, along with the accompanying recipes, is taken from his book, Al Roker's Big, Bad Book of Barbecue: 100 Easy Recipes for Backyard Barbecue and Grilling. Jerk Chicken Ingredients: One (3-1/2- to 4 lb.) chicken, cut into 8 pieces Preparation: Rinse the chicken pieces under cold running water, and pat dry with paper towels. Rub the chicken pieces all over with the jerk seasoning. Cover with plastic wrap and refrigerate for at least 4 hours and up to 12 hours. Let sit at room temperature for 20 minutes before grilling. Prepare a charcoal fire or preheat a gas grill for indirect grilling over medium heat. Put the thighs and legs on the grill, cover, and then 10 minutes later add the chicken breasts and wings to allow for different grilling times. Grill the chicken, turning once, for 1 to 1-1/2 hours, or until the juices run clear when the meat is pierced, and the internal temperature reaches 180 degrees F in the thickest part of the thighs and 170 degrees F in the breasts. Note: This is not a recipe named after your boss. The word "jerk" refers to the spice mixture used to coat the chicken. Brought to Jamaica and other Caribbean climes by African slaves, jerk has been used to season pork, chicken and anything else running around the backyard.

    Al Roker is my idea of a Renaissance Man. He can cook. He can Barbeque. He is funny. He wrote a parenting book. And now he wrote a cookbook. Add to that the fact that the cartoons in his cookbook are his very own, he does weather for NBC TV Today Show and that he is a TV person on the Food Network. I just wish he would invite me for dinner. This Texas girl loves Barbeque—and anyone who can cook it. I would even be happy if he invited me to be a taste tester. Al Roker, NBC-TV Today's weatherman, best-selling author, and self-professed foodie will release his second book, THE BIG BAD BOOK OF BARBEQUE this Father's Day, 2002. The book, published by Scribner, will be a collection of about 100 recipes from the Roker family as well as classic backyard fare, hot grilling tips, barbeque wisdom, Al's very own cartoons, and plenty of four-color photographs of Al in action with tongs and big spatula.
