Espagnole Sauce Basic Brown Sauce
In cooking, espagnole sauce is one of the mother sauces that are the basis of sauce-making in classic French cooking. Auguste Escoffier codified the recipe in the late 19th century, which is still followed today. Even though espagnole is the French word for Spanish , the sauce has little connection with Spanish cuisine. According to Louis Diat, the creator of vichyssoise and the author of the classic Gourmet's Basic French Cookbook : "There is a story that explains why the most important basic brown sauce in French cuisine is called sauce espagnole , or Spanish sauce. According to the story, the Spanish cooks of Louis XIII's bride, Anne, helped to prepare their wedding feast, and insisted upon improving the rich brown sauce of France with Spanish tomotoes. This new sauce was an instant success, and was gratefully named in honor of its creators." The basic method of making espagnole is to prepare a very dark brown roux , to which are added several gallons of veal stock or water, along with 20 or 30 pounds of browned bones, pieces of beef, many pounds of vegetables, and various seasonings. This blend is allowed to slowly reduce while being frequently skimmed. The classical recipe calls for additional veal stock to be added as the liquid gradually reduces but today water is generally used instead. Tomato sauce is added towards the end of the process, and the sauce is further reduced.

W. G. WATERS
Mrs. Celia Waters, wife of Dr. W. C. Waters, died at the family residence in Otsego last Thursday, after a long illness. For a number years she was a resident of this place and was respected by all that knew her. In the fall of 1893 she removed to Cardington, O., where ill health soon compelled her to leave. She then removed to Otsego at which place her health improved for a short time but it was only temporarily. The deceased was nearly 51 years of age. A husband, Dr. W. C. Waters and two children, H. W. Waters and Mrs. Shirer, wife of Dr. J. G. Shirer are left to mourn their irreparable loss. Funeral services were conducted Saturday forenoon at the Otsego M. O. church by Rev. S. T. Allen of this place.

George Perry Barber, M.D.
George Perry Barber, the eldest son of Samuel Reynolds Barber and his wife Adaline Flake Perry, born 22 August 1834, Georgia, 12 years after his great grandfather's (Captain George Barber) death. George Perry Barber was to become the genealogist of the George Barber -Margaret Watkins family, with the genealogy he wrote in the 1870s, consisting of less than two sheets of paper. When George Perry was young, his parents and grandparents moved from Georgia to Tennessee, on to Chambers County, Alabama by 1837, then to Shelby County, Texas. The following was written by B. B. Paddock, in his book History of North and West Texas , about George Perry Barber and his son George Patton Barber (page 261). "Dr. Barber's wife, who is now making her home temporarily in California, is the daughter of Sol Smith, of North Carolina, and she was married in Parker county, to which she had been brought at an early day, coming here with her father's family before either Parker or Palo Pinto counties were organized. "George P. (Patton) Barber obtained his education in the local schools, learning the printer's trade at Mineral Wells. He afterward went to Seymour, in Baylor county, Texas, where he established the SEymour News, which he conducted for fourteen years. It was a good newspaper, devoted to the general interests of the locality, and received a good patRonage, but on account of ill health Mr. Barber disposed of his paper and plant at Seymour and returnEd to Mineral Wells since which time he has been successfully engaged in the real estate business here. He has laid off and placed on the market the Barber additiOn, adjoining the town on the north, the growth of the town being in that direction. He is also owner of the George P. Barber well, with its pavilion, and also ships the water to outside towns, selling to the consumer. In addition to his real estate operations he is also a live stock broker, and he handles all kinds of insurance with the best companies.

Presumably the majority of these passengers actually arrived in the City aboard either the SS St. Louis on July 9, 11 A.M. or the Moses Taylor on July 12, 1863.

leader, dies. Served in State Senate and General Assembly. Highest funeral
attendance ever recorded in Fannin County.
Aug 9- Col Mike McKinney, 85, died. Founder of Blue Ridge.
-John F. Thomas, b 1842, d 1925, mar. Mary A. Walls and had 11 children: Dr. W. C., G. O., Mercer, Mrs Delia Price, Mrs Mary Ann Davis, Mrs Emma Thomas, Mrs Pool. History
M1115 – ‘Old Quarter Past Eleven’ Laid down on 30th May 1951 in the yard of Cook, Welton and Gemmell, in the Yorkshire town of Beverly, HMS Bronington was launched two years later on 19th March 1953 by Mrs. W G John, wife if Director of Naval Constructors. Completed in June 1954, the ship was renamed HMS Humber and assigned for four years to the 101st Minesweeping Squadron, in the RNVR Humber Division, based in Hull. During this period, she on the Thornycroft Trophy for minesweeping excellence, against completion from both regular and reserve units. Reverting to her original name in 1958, HMS Bronington rejoined the Fleet and served in various squadrons before entering refit in 1963 to begin minehunter conversion. Alterations included the fitting of an enclosed bridge, tripod mast and the latest sonar.
