Chef Challenged to Lessen the Fat While Maintaining Classic Appeal
New York —5/xx/05— In 1919, Algonquin General Manager Frank Case created a remarkable American phenomenon when he started sending over free popovers, olives and celery sticks to a lunching group of witty young writers. The result: the Algonquin Round Table, around which the likes of Dorothy Parker, Robert Benchley, Alexander Woollcott, George S. Kaufman, Edna Ferber, et al. gathered to dine and exchange witticisms daily until 1929. Their effect on American culture is legendary. Free food got the group of struggling young writers to come back day-after-day. However, as their collective and individual fame and fortunes grew, so did their ability to afford some of the more substantial fare. Case began asking members of the Round Table, along with other celebrity guests of the era, to pen brief notes about their favorite dishes. In time, he published a cookbook (“Feeding the Lions,” The Greystone Press, 1942), which included quotes of his famed guests extolling the virtues of their favorite Algonquin menu items. Now, more than 60 years since its publication, many of that cookbook’s recipes are being revived and reintroduced to diners in the hotel’s Round Table Room. Executive Chef Lorenzo Broncato, who was trained at the Culinary Institute of America and whose resume includes stints at New York’s Four Seasons Hotel and Le Bernardin, has been charged with updating the recipes to suit the modern palate.

O'Brien T HEN At the bottom of the pile he came upon a long envelope addressed to him by his title, instead of by his name, and bearing on its upper right-hand corner several foreignlooking stamps; they were British stamps, he saw, on closer examination. Chuckling under his breath, he wriggled himself free from the snug embrace of his chair arms and waddled out of his own office and down the long bare empty hall to the office of Sheriff Giles Birdsong. Within, that competent functionary, Deputy Sheriff Breck Quarles, sat at ease in his shirt sleeves, engaged, with the smaller blade of his pocketknife, in performing upon his finger nails an operation that combined the fine deftness of the manicure with the less delicate art of the farrier. At the sight of the Judge in the open doorway he hastily withdrew from a tabletop, where they rested, a pair of long thin legs, and rose. "Mornin', Breck," said Judge Priest to the other's salutation. "No, thank you, son. I won't come in; but I've got a little job for you. I wisht, ef you ain't too busy, that you'd step down the street and see ef you can't find Peep O'Day fur me and fetch him back here with you. It won't take you long, will it?"
