HACCP for Excellence is a technical consultancy to the food, drinks and catering industries, providing support in HACCP, HACCP assessment, microbiology, Assured Safe Catering and continuous improvement for business excellence.
Hazard Analysis and Critical Control Point (HACCP) was developed in the 1960s in the United States to ensure food safety for the first NASA manned space missions. Since then, HACCP principles have been defined and endorsed in international food standards, and in European and UK legislation.
HACCP is now the internationally recognised food safety methodology. Assured Safe Catering is a system based upon HACCP principles, developed for caterers to ensure food safety. Manufacturers should operate a HACCP system in order to be certain of complying with current and forthcoming food legislation. Catering establishments can achieve valuable benefits by using HACCP or Assured Safe Catering. Many major retail outlets now insist on HACCP implementation, and it is a requirement of the BRC Technical Standard for suppliers of Private Label products.

General Immunology
Host defense is present in many forms. Overall, the Immune Response (IR) can be divided into two major classifications; humoral and cell-mediated. While these responses are not mutually exclusive, they provide distinctly different avenues for dealing with pathogenic organisms or altered host cells. These different responses will be discussed in more detail later. Immune Response Humoral Immunity Cell-mediated Immunity (Antibody) (Cytotoxicity) Some of these responses are specific, others are non-specific. This page will introduce host defense mechanisms by defining some commonly used terms and describing the specific cells and tissues involved in these immune responses. DEFINITIONS: Antigen (Ag): A molecule which elicits a specific immune response when introduced into an animal. More specifically, antigenic (immunogenic) substances are:
  • Structurally complex (proteins are usually very antigenic),
  • Accessible (the immune system must be able to contact the molecule), and
  • Foreign (not recognizable as "self"). Antibody (Ab): A glycoprotein produced in response to an antigen that is specific for the antigen and binds to it via non-covalent interactions. The term "immunoglobulin" is often used interchangeably with "antibody". We will use the term "immunoglobulin" to describe

    Michele Klingbeil Receives NIH Grant
    August 2005: Michele Klingbeil , Assistant Professor of Microbiology, has recently been awarded a new four year grant from the National Institutes of Health (NIH) for a project entitled "Trypanosomatid Mitochondrial DNA Polymerases."
    Trypanosomes are ancient protozoan parasites that cause disease in humans and animals. Current drug treatments are inadequate, often toxic and no vaccines are available. The Klingbeil Lab is investigating the roles of four novel DNA polymerases in the replication of the unique trypanosome mitochondrial DNA network known as kinetoplast DNA. Information for their studies will provide an opportunity to develop new strategies for better drug treatments.
    Microbiologist Makes an Electrifying Discovery
    June 2005: Derek Lovley , Distinguished Professor of Microbiology, and a group of researchers have discovered that Geobacter produces pilin-like filaments that function as nanowires. This finding helps explain how microorganisms clean up groundwater and produce electricity from renewable resources. This discovery also has the potential for the development of nanoelectronic devices, sensors, and microbially based fuel cells.     Microbiology is a three-credit semester course that can be used to partially complete the general education requirements for Baccalaureate degrees at the University of Minnesota, Crookston.
    Selected Web pages will be used as reading assignments for the course and laboratory handouts will be provided. All students will purchase Microbiology Perspectives (Prentice Hall - 1999). This course will discuss microbe morphology (structure), growth requirements, transmission of microbes, and control of microbes. Basic lab techniques related to asepsis, culturing and identification of microbes, economically important microbes, body defenses, diseases, and food/water/agricultural microbiology will be emphasized.
    The instructor integrating these pages into a semester syllabus intends to: 1. Present a course that contains current, accurate, and stimulating reading for microbiology students; 2. Provide a new technological approach to replace the traditional textbook; 3. Encourage student involvement with the Internet sources related to microbiology and;
